Job Description and required qualification:
(Important Note – Position open to Kenyan nationals only)

Under the direct supervision of the Center Manager, the incumbent will effectively manage the kitchen team to achieving the highest standard of food production including the following functions;

? Oversees the effective running of the kitchen, the preparation of well balanced meals and the maintenance of pristine cleanliness in the kitchen area;

? Arranges and directs the appropriate storage of food and supplies whilst maintaining safety standards throughout all food preparation and storage areas;

? Monitors and maintains the inventory of food and supplies and communicating to the Center Manager for purchases and supplies;

? Plans and writes nutritious menus for all meals including special dietary needs with the participation of the shelter residents;

? Regularly meet shelter residents to participate in the making of the menus and giving their views on the preparation of meals at the shelter;

? Provide leadership and team work to the shelter kitchen staff for the effective and proper running of the kitchen;

? Undertakes regular audits of all areas within the kitchen and storage areas to ensure high standards of hygiene and cleanliness are maintained and adhered to; ? Undertakes any such duties as may be required.

Requirements:
Education – Diploma in culinary from a recognized institution and a certification from the Ministry of Health to handle food stuff and items. Experience in working with a refugee assisting agency will be added advantage.
Working Station/Duration: The successful candidate will be stationed in Nairobi.

Skills and Competencies
? Knowledge of techniques and methods of quantity food preparation and storage;

? Skill to prepare large quantity meals with a minimum of waste

? Knowledge of and ability to train others in safety practices related to food preparation and use of commercial kitchen utensils and equipment;

? Knowledge of and ability to train others in sanitary methods of food handling, food preparation and cooking techniques;

? Skill to monitor inventory levels and requisition supplies to ensure adequate supply of food stuffsExperience – Applicant must have at least 7 years experience in working with a reputable institution.

Languages
Proficiency in English and Swahili.
